The jar is a living larder, not a batch with a finish line.\n\nThis is how a Sichuan **paocai** crock works — a perpetual brine that gets fed continuously and improves as it goes. It is not a workaround for a small harvest; it is the technique that suits one.\n\n**Why brine and not a mash:** a mash relies on the fruit's own juice to submerge itself, which needs real volume — half a kilo or so. A brine ferment works at any scale, so 25g of chilies in a small jar is perfectly viable where the same fruit chopped into a mash would sit in a mostly-empty jar and struggle.\n\n1. **Prepare the jar:** Wash a 500ml wide-mouth glass jar and whatever you are using as a weight in hot soapy water and rinse well. No need to sterilize — this is a ferment, not a canning project, and you want the ambient microbes.\n\n2. **Mix the brine:** Stir 12g (4 tsp) Diamond Crystal kosher salt into 350ml (1½ cups) non-chlorinated water until fully dissolved. Filtered, spring, or tap water left uncovered overnight all work; chlorine straight from the tap will slow the ferment down. You will likely not need all of it — see the Notes on displacement.\n\n3. **Pierce the chilies:** Stem 25g (about 12) ripe red Thai chilies and pierce each one once with a knife tip, or halve them lengthwise. Whole unpierced chilies trap air, float stubbornly, and ferment unevenly on the inside. They also become noticeably less buoyant after a day or two once brine has worked its way in, so the first 48 hours are the fussy part.\n\n4. **Pack the jar:** Put the chilies in with 2 cloves garlic, 1 bay leaf and ½ tsp black peppercorns. Fold 1 large cabbage or collard leaf to roughly the jar's diameter and lay it over the top as a false lid. Chilies are small and buoyant and will otherwise escape around the edge of any round weight — the leaf is a barrier that catches the strays. **It is not the weight.** It floats as readily as they do.\n\n5. **Add brine, then weight it down:** Pour brine over until the chilies are covered by 2–3cm, leaving 3–5cm of headspace at the top. Set a weight on the leaf so nothing floats above the brine line, and top up with a little more brine if the weight pushes the level around. **Everything that breaks the surface is where mold starts** — this is the single most important mechanical step. The weight itself may sit partly above the brine; only the food has to be submerged. Stand the jar on a plate, because it will bubble over.\n\n6. **Close it loosely and ferment at room temperature:** 21–24°C is ideal. Set the lid on and screw the band finger-tight, then back it off a quarter turn — CO₂ will push past on its own and the jar is effectively self-burping. A fully tightened lid must be burped daily instead. Expect bubbling by day 2–3, the brine turning cloudy, and the smell shifting from raw and sharp to sour and bright.\n\n7. **Start tasting at day 7:** There is no target date — stop when it tastes good to you. A week is bright and chili-forward; three or four weeks is rounder and more sour.\n\n8. **Feed it as fruit ripens:** Pierce the new chilies, lift the weight and leaf, push them under, replace the leaf and weight, and top up with fresh brine at the same strength — **100ml (scant ½ cup) water to 3.5g (1¼ tsp) Diamond Crystal kosher salt** — until everything is submerged again. Adding fresh material restarts fermentation on the new fruit, so a fed jar is never uniformly \"done.\" That is the trade for being able to start today.\n\n9. **Draw off what you need:** Fish out chilies to chop into dishes, or blend a batch smooth with a splash of the brine and a little rice vinegar for a pourable sauce. Keep the jar going.\n\n## Notes\n\n- **House formulation, developed 2026-09-06.** The paocai feeding principle is traditional; these quantities were sized here for a trickling three-plant Thai chili harvest.\n- **Brine strength is 3.5% of the water weight**, the standard range for a vegetable brine ferment. Because it is measured by weight, the Diamond Crystal / Morton density difference does not apply — weigh the salt and any brand works.\n- **What to use as a weight.** A purpose-made fermentation weight is a flat glass disc, 6–8cm across, usually with a knob or an edge notch for retrieval; buy them sized for a **wide-mouth** jar. Substitutes that work as well or better: a small 125ml jar filled with water and lidded, nested inside — easiest to lift in and out, which matters on a jar you open every few days; a votive holder, shot glass, or ceramic ramekin filled with water; boiled glass marbles; or clean **non-calcareous** stones (quartz or granite — limestone dissolves in acid). A thick carrot slice cut wider than the jar's neck and wedged crosswise under the shoulder braces everything down and needs no weight at all.\n- **No metal, and this is the one place the usual metal-over-plastic instinct is wrong.** An acidic brine corrodes plain steel and aluminium and taints the batch; even stainless is a maybe over weeks of contact. Glass, ceramic, stone, or a vegetable. The common brine-filled zip bag is skipped here on the same principle, and it dilutes the ferment if it ever leaks.\n- **Brine covers the food, not the jar.** 2–3cm over the chilies, 3–5cm of headspace left above. Filling to the shoulder invites an overflow once it gets going.\n- **Headspace is less dangerous than it looks.** The CO₂ produced during active fermentation is heavier than air and blankets the surface, displacing oxygen on its own. The real risk windows are the first day or two, before CO₂ production ramps up, and the tail end when it slows — which is why getting everything under the brine on day one is the step that matters.\n- **A nested jar displaces a lot of volume**, so expect to use only 200–250ml of the 350ml. Mix the full amount anyway at the stated ratio and refrigerate the remainder; it is already the right strength for the first feeding, so nothing is wasted.\n- **Kahm yeast versus mold, the one distinction worth memorizing.** A flat, white, wrinkly film on the surface is kahm yeast: harmless, skim it off, carry on. Anything fuzzy and raised — blue, green, black, pink — is mold: discard the jar. Flat and white, fine. Fuzzy and colored, gone.\n- **Garlic sometimes turns blue-green** in an acidic ferment. It is a harmless reaction with sulfur compounds and it looks alarming enough that people throw away perfectly good jars over it.\n- **This jar becomes a starter.** Freezing ripe chilies to accumulate a larger batch knocks back the wild surface microbes a ferment depends on, so a big batch built from frozen fruit is slow to get going. A splash of live brine from this jar inoculates it immediately.\n- **Keep the brine when you blend.** It is a seasoning in its own right — a few drops in a dressing, a soup, or a bloody mary.\n- **A splash of fish sauce belongs at the finish, not in the jar.** Added at blending it gives a savory bottom the chilies do not have on their own; added during fermentation it just muddles.\n- **Capsaicin is oil-soluble.** After piercing this many chilies, rub your hands with a spoonful of neutral oil and wipe before washing with soap.
