I used a mix of oyster and shiitake.\n- While this recipe calls for oat milk, any milk can be used.\n- **Missing ingredients added to the list (2026-07-30):** olive oil, salt, pepper, the splash of water for the mushrooms, and the balsamic vinegar for serving were all called for in the steps but appeared nowhere in the ingredient list — the olive oil in particular is something you buy, and the shopping list was not carrying it. All five are now listed. **No quantity was invented for any of them**; they stay unmeasured, which is legitimate house style for oil-for-cooking and salt-to-taste, and matches how the steps already read (\"some olive oil\", \"a splash of water\"). Roll out dough (1/2 of recipe) to fit a 9\" pie pan. Place dough in pie pan and situate as needed. If using glass or ceramic pie pan, blind bake crust and cool.\n\n### Combine and bake\n1. Preheat oven to 175℃ (350℉).\n2. To the onion/leek/mushroom mixture, add eggs, milk, and cheese; stir to incorporate.\n3. Pour mixture over prepared pie crust.\n4.
