Mushrooms are better sauteed with some water.\n\n### Sautee Spinach\n\n1. In a large pot, add the spinach leaves and a bit of water.\n2. Cook over medium-high heat until leaves are wilted.\n3. Using a clean kitchen towel or cheesecloth, press/squeeze as much water out of the spinach as possible.\n4. Set aside to cool.\n5. Chop when ready to use.\n\n### Lasagna Noodles\n\nCook noodle sheets per directions. 9 are required for the dish; the extras are in case of rips or breaks.\n\n### Ricotta Cheese\n\nIn a small bowl, combine:\n-   Ricotta cheese\n-   Egg\n-   Cinnamon\n-   Salt/Pepper to taste\n\n### Build\n\nUsing a 9x13\" baking dish lightly oiled with the extra virgin olive oil, spread a spoonful of sauce over the bottom of the dish, then layer two-times:\n\n-   Noodles (three per layer)\n-   Ricotta mixture\n-   Vegetables (spinach, mushrooms, peppers, zucchini, etc)\n-   Sauce\n-   Parmesan cheese\n\nFinish with a top layer of noodles topped with more sauce and parmesan cheese.\n\n## Bake\n\n1. Oil a sheet of foil with cooking spray to avoid sticking.\n2. Tightly cover the baking dish with foil.\n3. Bake for 40 minutes.\n4. Uncover and bake another 10 minutes.\n\n## Rest\n\nRemove from oven and let rest, uncovered, for 5 to 10 minutes and serve.\n\n## Notes\n\n- **Coverage repair (2026-07-30):** the fats did not line up in either direction. The 2 tablespoons extra virgin olive oil were listed but never called for by any step, while the Bake step called for cooking spray that was not listed. The oil is now named at the one step that asks for oil -- the Build step's \"lightly oiled\" baking dish -- and cooking spray is on the ingredient list as an unmeasured line.
